{"id":192,"date":"2017-07-01T22:03:04","date_gmt":"2017-07-01T22:03:04","guid":{"rendered":"http:\/\/courses.washington.edu\/ps385\/?p=192"},"modified":"2017-07-03T06:37:08","modified_gmt":"2017-07-03T06:37:08","slug":"constraints","status":"publish","type":"post","link":"https:\/\/courses.washington.edu\/ps385\/constraints\/","title":{"rendered":"Constraints"},"content":{"rendered":"<p>When starting this course, I had a rough understanding of the food culture and how it has been changing over the years.\u00a0 After reading Michael Pollan&#8217;s <em>In Defense of Food<\/em>, I quickly realized that we are in the midst of a change that is leaving population of the world more unhealthy and with less nutritional options to choose from.<\/p>\n<p>When I go to the grocery store, I know I have two constraints, money and time.\u00a0 Being a full-time worker while also finishing up my college degree, I know that out of\u00a0 the seven days of the week, I will only have two or three days where I can put together a meal.\u00a0 So most of the time, I&#8217;m looking for a quick fix.\u00a0 Something that I can put together with limited time and with a cheap price.\u00a0 After reading this book, I can see why this is becoming a common trend for most consumers. \u00a0In the &#8216;middle aisles&#8217;, as Pollan coined it, bright colored labels and fun looking mascots plaster the packages of processed goods such as cereals, cookies and chips.\u00a0 I remember as a child, tugging at the arms of my parents, hoping they would purchase these items as they most appealed to me.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"http:\/\/az616578.vo.msecnd.net\/files\/2015\/12\/20\/635861753820096903-291510983_Screen%20Shot%202015-12-19%20at%209.29.25%20PM.png\" width=\"250\" height=\"185\" \/><\/p>\n<p>It&#8217;s only when you look beyond these captivating labels when you wonder where this stuff came from, what chemicals they used and what preservatives were added in order for the shelf life to last so long.\u00a0 Sure, it tastes great, I can eat a whole bag of Cheetos in one sitting, but at what cost?\u00a0 What I learned from Pollan is to really look at these items and to be more diligent when shopping, we have to understand our relationship with food and how certain foods affect us.\u00a0 Perhaps the solution is to be more health conscious overall, but the barriers that stand in our way are much bigger than us.<\/p>\n<p>&nbsp;<\/p>\n<p>Photo:<\/p>\n<p><i>Potato Chips<\/i>. 2015.
